I created Dallas Chocolate Classes to offer fun and relaxed hands-on private classes and team events to make you more educated, enlightened, and excited about the fascinating world of chocolate. In my classes, I share with you my more than two decades of experience working with chocolate.


In 1990, I was living in Paris, France where I became good friends with the Jambon family, founders of the European chocolate company Jeff de Bruges. Michel, the father, taught me a great deal about fine chocolate and how to appreciate various styles of chocolate making. After my time learning more about chocolate and pastry from Miyuki Watanabe at La Petite Rose pastry shop in Paris, I became passionate about the craft of working with chocolate and baking. I continued my life-long journey and education in chocolate and pastry when I moved to Dallas where I worked for years independently in chocolate selling retail and wholesale products and providing chocolatier services at high-end weddings and events. I also have formal training from various schools, including The Cordon Bleu in Paris, The French Pastry School in Chicago, and The Chocolate Academy.


In 2006, I started working with James Beard award-winning author Rose Levy Beranbaum and began working on cookbooks for publishers around the world. I am the translator of several published cookbooks and have recipes published in others. I began teaching and presenting on chocolate in 2011 to share all my experience and knowledge with you through fun and educational chocolate classes and programs for all levels.

About this activity

This chocolate truffle-making class is a fun and educational guided tasting journey plus demo that ends in a hands-on French-style chocolate truffle rolling experience for your group.

What you'll do

  • Start by learning about the origins of cacao (with visual aids) to better understand how chocolates are labeled.
  • Taste premium chocolates of varying cacao percentages and flavor profiles to understand the impact on a chocolate truffle recipe. Chef Zach will keep it fun and interactive by asking questions along the way to challenge the group's perceptions and knowledge about chocolate.
  • After learning about chocolate’s natural flavors, your chocolate truffle-making expertise will be taken to the next level!
  • Next, watch Chef Zach, along with volunteer assistants from your group, demonstrate the recipe for making the perfect chocolate truffle. Learn tips and techniques as used in professional chocolate shops.
  • Next, the program becomes hands-on. As participants don chocolatier gloves, they are paired together to create and name their own “chocolate shop” and roll and decorate their French-style chocolate truffles.
  • Each person takes home 6 to 8 truffles in their chocolate-colored bonbon boxes, along with copies of two recipes for both milk and dark chocolate truffles.
  • At the end, groups share their chocolate shop names and show their creations.

What to prepare

Prepare enough table space for everyone to work comfortably. No kitchen equipment is needed for this class.

All prices are upfront. There are no extra charges beyond what you pay when you book. In 99% of cases, hosts won't ask for tips because they're already included in the price.

All activities you see on Spaciously are private. You will get a dedicated instructor. You will also get either an entire venue or a section of a venue to yourselves.

All activities are available

If our calendar allows you to pick a date and time, your activity is available! In the rare scenario that your host has an emergency and can't make the date, it's our responsibility to find you a substitute host or a substitute activity quickly. If you don't like the options, we'll send you a full refund.

We work only with highly reliable hosts. Every single one of our hosts is a small business owner. We either saw them in action, received a recommendation from another client or had a personal call to go over their proposed activity. Small business owners spend years mastering their skills. They put great care into planning your experience.

Organize a team-building activity at your office

People love when they don't have to go out of their way for team-building. Invite the activity host to travel to your venue by selecting the option "My venue/office."

Some building management companies don't allow certain activities, e.g. cooking if you don't have a kitchen. Make sure you check this before you book.

Most buildings require a certificate of insurance. A one-off certificate of insurance costs ~$150 online, but 99% of the time, our hosts can provide one for free. There may be some back-and-forth with your building management to agree on the coverage, but we are happy to collaborate with you on this.

Cancel or change your reservation

Refer to the cancelation policy on each listing when you book to see how much time you have to cancel your reservation. To cancel, answer the email thread we will start with you or contact hello@spaciously.io.

Regardless of the cancelation policy, hosts usually allow you to move the time of your booking a bit or to add a few more people. We are very collaborative when it comes to small event adjustments. Ultimately, we all want your event to be successful because we want to be your partners for a long time!
